Meet The Chef

Executive Chef Miguel Santiago brings two decades of culinary experience to Capital Hilton. He refined his passion for cooking with flavor and spices at resorts throughout Florida and Puerto Rico.

Born in Puerto Rico, Chef Miguel formed an interest in cooking from an early age in a family-owned restaurant on the east coast of the island. After graduating from high school, he attended culinary school and earned his first culinary position at The Sands hotel in San Juan. Miguel's experience includes upscale hotels in Florida, and most recently, the El Conquistador Resort and Las Casitas Village in Puerto Rico, which is part of the Waldorf-Astoria Collection. He has participated in the South Beach Wine & Food Festival, March of Dimes and Cattleman's BBQ competition.
