By the time she graduated high school, Chef Eileen Watkin knew that she wanted to cook. Inspired by her mother's hobby of cooking diverse cuisines, Watkin's followed her passion to the esteemed Culinary Institute of America.
Watkin served an internship at the Commanders palace in New Orleans under Chef Jamie Shannon. Following her graduation in 1997, Watkin worked under Francesco Materolla and Chris Scarduzio at Brasserie Perrier where she met chefs Roberta Adamo and Ed Vadden. Together, they later opened two highly successful restaurants.
Watkin worked alongside chefs Vadden and Andrew Hewson under 2-Star Michelin Chef Kai Lerman, creating contemporary American Cuisine at the opening of the Ritz Carlton in 2000.
Watkin re-joined chefs Adamo and Vadden at the opening of Penne Restaurant and Wine Bar in 2002, where she began as a Sous Chef and later accepted the position of chef de Cuisine. Eileen's fare focuses on 'fresh, bright flavors that create a stimulating and appealingly balanced experience for all parts of the palate'.
