This 20-year institution at the Hilton Brighton Metropole hotel is a great place to celebrate a special event or just sit, savor and finish the weekend in style whilst appreciating the sounds of the Jazz Band.

Meet friends and family in the new Waterhouse Bar and Restaurant for a pre-brunch drink. On your arrival you will be greeted with either a Sunday staple Bloody Mary or Bucks Fizz before being shown to your table.

Enjoy the delicious h’orderves such as fresh smoked salmon and hearty soups, followed by succulent roasts and all the trimmings served by the Chef from the carvery. For dessert, our patisserie chef brings to you his delicious 'dessert island' which features a selection of sweet and fruity delights.
