Executive Chef Paul Bates

Meet the Chef

Opening OXBO Bankside has given Chef Paul Bates the opportunity to create the restaurant of his dreams, exploring new ways of thinking about traditional British dishes. His love for food started from an early age, helping at his grandparent's B&B. Simple food cooked well was their mantra, and it's the same attitude Chef Paul Bates has maintained throughout his career.

His travels to Australia and Singapore inspired him to experiment with different food combinations. By contrasting authentic ingredients with exotic flavours chef Paul Bates has managed to give old English favourites an unexpected twist, making OXBO Bankside the home of honest flavoursome food.

Bankside Bee Hives

Back in May 2016, Hilton London Bankside partnered with Bermondsey Street Bees to install four urban beehives, designed by international jewellery designer Alex Monroe (famed for his 'bee' necklace), on the hotel's garden roof terrace, just four floors above OXBO Bankside. The rooftop meadow was originally built to help reintegrate greenery into the Bankside landscape. Alongside wild flowers and a variety of plants, the beehives have been installed as part of Hilton Bankside's proactive contribution to London's green infrastructure.

Additionally, the harvested honey is being used by Executive Chef Paul Bates in the OXBO Bankside kitchen, guest having the opportunity to try it out on the weekends for either our Bottomless Saturday Brunch or our Bottomless Sunday Roast.

Design-Led Hotel

The art throughout Hilton London Bankside was inspired by the authenticity and history of the local Bankside neighbourhood, a combination of Urban and Brutalist Architecture and fine polished features reflect the new Hilton Bankside signature design and luxury feel.

Curated by Peter Millard and Partners Studios, twelve British artists have contributed to the design of the hotel - including David Farrer's incredible sculptures in OXBO Bankside restaurant, Niki Hare's graffiti artwork sitting on the back-brick wall of the porte-cochère and Simon Bingle's three-dimensional reflection of graffiti art in the executive lounge.

References to the neighbouring Tate Modern can be seen in the lobby flooring, which evokes the famous Turbine Hall, and the unique collection of art displayed throughout the property.
