Our Hilton Dulles hotel living sustainably!
Our chef, Craig C. Mason oversees culinary direction and menus in both the Old Ox Restaurant and Cardinal Lounge, as well as the hotel’s banquet and catering operation. With a degree in Culinary Arts from the Culinary Institute of America, Mason’s primary culinary focus is to promote eco-sustainability through environmentally friendly products, ‘food for thought’ entrees and farm-to-table initiatives. This includes his own garden at the hotel used to create innovative dishes prepared with only the freshest ingredients.
He has also developed an innovative partnership a ‘repeating cycle that gives back to the environment with the help of Shenandoah Agriculture. Our Hilton Dulles hotel purchases locally produced canola oil from Shenandoah Agriculture Products; after the oil has been used, they come back and pick up the used oil and transforms it into biodiesel fuel that is then used to power the farm equipment there and elsewhere in the region creating a full circle recycling event.
