We take pride in having great relationships with local farms and vendors to provide our guests with fresh, seasonal ingredients. Chef Joshua Grimes
Born and raised locally in San Diego, Executive Chef Joshua Grimes' first developed an interest in cooking from his grandparents who would cook southern home-style dishes during the summers he spent with them. Chef Josh started his career in a local restaurant on Harbor Island, before acquiring his first hospitality position in the US Grant Hotel where he moved through the ranks from steward to banquet cook. After a stint in the Grant Grill, mentored by Gunther Emathinger, Chef Josh was welcomed to the Hilton family, where he has held various positions in different hotels. In 2014, Grimes accepted the Executive Chef position at coastalKITCHEN where he has been instrumental in developing our farm to fork philosophy.

Happy Hour & Poolside Service
Join us from Sunday to Thursday between 3:00 p.m. - 6:00 p.m. for Happy Hour, featuring great deals on drinks including $5 select beers and wines and $2 off cocktails. Perfect for lazy days by the pool, coastalKITCHEN also offers a poolside service, offering our delicious craft cocktails, beers, wines and appetizers to enjoy in the Californian sunshine.
