Chef Alex Emery
Alex Emery, Executive Chef at Del Mar Hilton is a San Diego native which his culinary philosophy is local and regional ingredients influenced by Mexican Flavors. He was influenced by Julia Childs at an early age to begin his cooking career. Having begun his career as a dishwasher when he was 16 years old at the Coronado Cays Yatch Club, Chef Emery worked his way up through the culinary ranks while attending culinary school at the San Diego Culinary Institute. He then worked under Chef Brian Malarkey at the iconic Oceanaire Seafood Room, The Pearl Hotel, Hilton San Diego Bayfront and most recent La Valencia Hotel running culinary operations, to name a few. In his 12 years as a professional chef, Emery has participated in The March of Dimes, Black, White & Bling Bash for the San Ysidro Health Center, Chef's Throw down at the Hotel Del, Winner of the Most Beautiful Dish by Hilton Worldwide, member of the Chaine Des Rotisseures and multiple wine dinners and local pop ups around San Diego. He is influenced by such culinary leaders like Rene Redzepi and Massimo Bottura to be a positive role model and show leadership in his management style.

Happy Hour & Poolside Service
Join us from Sunday to Thursday between 3:00 p.m. - 6:00 p.m. for Happy Hour, featuring great deals on drinks including $5 select beers and wines and $2 off cocktails. Perfect for lazy days by the pool, coastalKITCHEN also offers a poolside service, offering our delicious craft cocktails, beers, wines and appetizers to enjoy in the Californian sunshine.
