We use one our local ingredients, pandan leaves.
Why pandan leaves? Because pandan leaves are easy to use.
We made some trials and did our research in our bakery
to have make our pandan croissant just right.
Pandan leaves have an authentic taste and natural color
that makes different flavor sensation to other croissants
We blend the flour with water
then we substitute with pandan leaves water that we infused before
And right after that we make dough and resting it for finishing
After resting approximately 1 hour,
we start to sheet the dough, then add butter
we cut using the triple singles method
then we let it rest again
After that, the dough is ready
to roll into a croissant
then let again rest in the chiller for 15 minutes
After that we remove from the chiller and put into the proofer
then we let it rest again for about half an hour
then the croissants are ready to bake
the croissants are baked for about 15 - 18 minutes
The croissants are ready to serve!
