Executive Chef Marissa Burback oversees HopCity Tavern + Market’s culinary offerings to reflect the seasonality and diversity of the Pacific Northwest’s bounty of ingredients. Following her passion for great cuisine, Chef Marissa reinvents traditional dishes in an ever-changing menu that brings local ingredients together with a creative flair. The American gastropub menu is influenced by her Oregon upbringing and highlights her passion for food shared amongst friends and guests.
Chef Marissa attended the Western Culinary Institute’s Le Cordon Bleu program in Portland. Following her culinary education, she joined the team at the Pavilion Trattoria, a fine dining restaurant in Portland. For her next adventure, she joined the Porto Terra Italian restaurant as a Sous Chef and was quickly promoted to the Executive Chef position, leading the way for the Porto Terra to be applauded by the discerning local patrons.
Chef Marissa’s culinary skill was requested for the opening of HopCity Tavern + Market in 2015. Today, she continues to lead both establishments, evolving the HopCity Tavern menu on a seasonal basis to lend to a fun, original and delicious experience. For HopCity Market, she constantly researches concepts and updates the product offerings with locally-made edibles, seasonal must-have items and with her own freshly-made creations. Her playful mindset with food, constant innovation and a fresh take on classic ideas, lends to HopCity Tavern + Market being a Portland standout.
Located adjacent to the Tavern, HopCity Market provides a range of grab and go selections to start your morning, enjoy for lunch, or pick up a snack to bring along for your day. From morning favorites such as coffee drinks from Stumptown Coffee Roasters and Spielman’s Bagels to anytime baked goods from Marsee Baking and Sesame Donuts these favorites stand alongside selections of locally sourced nuts, candies, and other savory snacks to fulfill any craving.
