Spencer's for Steaks and Chops, the original USDA Prime steakhouse celebrates its 20th anniversary. A Salt Lake City staple, Spencer's delivers contemporary and seasonal dishes, hand-cut steaks, fresh seafood, local produce and cheeses as well as classically inspired cocktails, local craft beers and an award-winning wine list.

Chef Sebastian Lowrey is passionate about aging, curing, and smoking meats. With layers of cultural influence and diverse kitchens, he has come to Spencer's Salt Lake City and taken the role of Executive Chef. Notably, Chef Sebastian's experiences in scratch kitchens and eclectic restaurants set him apart in organics. Hands-on experiences, including spending time at Green Gulch Farm, the oldest organic farm on the coast of California and heavy influence from his mother Lucy who hails from the Mountains of Campobasso in the South of Italy have cultivated his desire to bring fresh local flavors onto his menus. Chef Sebastian acquired formal training in culinary, farming, and wine making while at the Culinary School of The Rockies. His cooking has been recognized by media, notably the Marin Independent Journal, stating 'He is French at his core' but his every day menu holds more closely to the Italian-with-American-updated accents.
At Spencer's for Steaks and Chops located in the downtown Salt Lake City, Chef Sebastian is combining his love of meats, organics and French/Italian influences in and exciting array of creations. Chef Sebastian is passionate about bringing creative special events to Spencer's including an exclusive Balvenie Scotch pairing dinner, featuring items such as a House Cured Duck Bacon with a Scotch Maple Glaze and Coffee & Bacon Braised Wagyu Beef Brisket. Chef Sebastian is also an expert butcher and will be offering items such as his signature dry aged steaks and house-cured meats for our exquisite charcuterie boards.
Outside of the kitchen Chef Sebastian enjoys traveling with his wife Megan. When at home, he can be found testing wine pairings and tending to his impressive herb garden for cooking and entertaining.
