This contemporary pub and kitchen serves Northwest eats, local craft brews, regional wines, and cocktails in a comfortable and urban setting. Reserve one of our two Private Dining Rooms in advance for a lunch or dinner for up to 20 guests. Patio seating is available seasonally with a view of Esther Short Park.

Chef Troy Lucio | Executive Chef, Grays Hilton
An award-winning culinary leader, known for his bold, intricate flavors and fresh ingredients, Chef Troy Lucio brings more than 20 years of multinational experience in the food and hospitality industry to Grays Hilton. Chef Lucio discovered his unique talent for the culinary arts at a young age during his childhood in Tuscany, Italy. He honed his skills though the study of Italian, French and International cuisine at the Italian Hotel Management & Culinary Institute. A master of culinary creations, Chef Lucio spent the majority of his career leading top kitchens across Germany and California before carving his niche amongst the fresh, colorful agriculture of the Pacific Northwest. Known for his creativity, imagination and attention to detail, Chef Lucio crafts exquisite layers of flavor that surprise and delight.
Chef Samuel Hess | Chef, Grays Restaurant and Bar
With more than 20 years of experience in the hospitality and restaurant industry, Samuel Hess brings his culinary expertise and versatility to Grays as hotel chef. Inspired by the restaurant-obsessed culture of his New Orleans upbringing, Chef Hess developed a unique affinity for crafting rich flavors while studying in the kitchens of world renowned chefs such as Emeril Legasse, Susan Spicer and Donald Link. Before joining the Grays culinary team, Chef Hess established several restaurants in the Bahamas and Texas, ranging from authentic pit BBQ to upscale island cuisine. He brings his Southern hospitality roots and newfound love for the Pacific Northwest food scene to Grays.
Our Private Dining Room features warm reclaimed wood, and floor-to-ceiling windows. Elevate your corporate event with our 65-inch TV or take the meeting outside to the patio and cozy-up to one of two fire pits. Customized set menu options are available.
We also feature the Parkview Room which overlooks Esther Short Park that can seat up to 12 guests – perfect for your one-of-a-kind event.
